Creamy Celery Soup
- 2 tbsp olive oil
- 40 grams butter
- 600 grams celery chopped
- 2 red onions chopped
- 5 clove garlic chopped
- 800 ml chicken stock
- 200 grams mascarpone
- 1 large pinch of salt
- 1 large pinch of pepper
- Heat oil and butter over a low heat.
- Add celery, onions, garlic and salt and pepper.
- Cook over low heat until soft.
- When soft add chicken stock and simmer for about 15 minutes.
- Add mascarpone.
- Blend soup until smooth.
- Serve with warm crusty bread.
- Enjoy.
