Creamy Celery Soup

  1. Heat oil and butter over a low heat.
  2. Add celery, onions, garlic and salt and pepper.
  3. Cook over low heat until soft.
  4. When soft add chicken stock and simmer for about 15 minutes.
  5. Add mascarpone.
  6. Blend soup until smooth.
  7. Serve with warm crusty bread.
  8. Enjoy.
