Easy Creamy Broccoli Soup #SP5

• 1 bunch broccoli
• 12 small onion
• 2 bouillon cubes
• 1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
• shredded cheese (to garnish)

1. Wash broccoli.
2. Mince onion and cook in 4 cups water with the bouillon.
3. Cut broccoli into bite sized pieces--peel stems and dice, cut flowerettes into small pieces--add to broth.
4. Boil until tender.
5. Add mashed potatoes and stir until warmed.
6. Garnish with cheese if desired.
