Gan Eden Salad
- 1 cup bulgur wheat or 1 cup bulgur
- 1 onion, chopped
- 1 cup fresh mushrooms, chopped
- 12 cup pecans, chopped
- 12 cup raisins
- 12 cup dried fig, chopped
- 1 teaspoon lemon zest
- 12 lemon, juice of
- 1 tablespoon olive oil
- 1 teaspoon thyme leaves
- 12 teaspoon cinnamon
- salt and pepper
- Cook bulgur or wheat kernels until soft-usually 2 cups of water to 1 cup of grain is sufficient.
- Saute onions until translucent, add mushrooms and saute 2 minutes more.
- Add thyme and cinnamon.
- Mix onion and mushroom mixture together with bulgur or wheat.
- Add pecans, raisins, figs and lemon zest.
- Season with lemon juice, salt and pepper.
