~Cowboy Tater Salad~
- 12 potatoes
- 1 1/2 cup mayonnaise
- 2 tsp spicy brown mustard
- 1 can black olives
- 3 celery stalks
- 1/4 cup chopped white onion
- 6 boiled eggs
- 2 tsp vinegar
- 1 tsp sugar
- 2 diced whole pickles
- 1 tsp salt
- 2 tbsp McCormick mesquite seasoning
- 1 tsp course ground black pepper
- 1/4 tsp dry mustard
- wash chop and boil potatoes till tender, you can leave the skin on if you choose to.Boil your eggs on high heat till done.
- now mix your mayo, mustard, vinegar, salt, pepper & 1 tbspn of mesquite seasoning, mustard powder & sugar to a bowl, you can adjust seasoning add more if needed.
- Refrigerate while your potatoes and eggs are cooking
- once your potates are done rinse in cold & drain water set in bowl, peel eggs, chop & add to bowl, drain & add olives whole, & diced onion
- Chop celery,onions, & pickles add to potatoes & eggs.
- Top with your dressing & incorporate well sprinkle with last of your mesquite chill in fridge atleast 1hour
