Savory Pork Roast
- 2 pounds Pork Roast
- 2 teaspoons Salt
- 1 teaspoon Black Pepper
- 2 teaspoons Garlic Powder
- 2 Tablespoons Extra Virgin Olive Oil
- 1 cup Chopped Onion
- 1 cup Tomato Chunks
- 1 Tablespoon Chopped Rosmary (fresh)
- 1 Tablespoon Chopped Thyme (fresh)
- 1 Tablespoon Chopped Sage (fresh)
- 1 cup Water Or Chicken Broth
- Season pork with salt, pepper and garlic.
- Brown pork 2 minutes on one side in the extra virgin olive oil.
- Flip pork and add the onions, browning for another two minutes.
- Add remaining ingredients to a pressure cooker, set to pressure 80 or Stew mode, set timer for 40 minutes to cook.
- After 40 minutes, turn cooker off, release pressure.
- At this point you can strain the juices, simmer, adding cornstarch to thicken the broth to a gravy consistency.
- I usually add the onion back in the gravy because I love it over mashed potatoes.
- Note: recipe can be adapted to a slow cooker, cooking on high for one hour and then low for approximately 6 hours or until done.
