Pressure Cooker Soft-Simmered Squid and Daikon Radish

  1. Cut the daikon radish into 1.5 cm slices.
  2. Remove the entrails from the squid, and chop into 1 cm wide pieces.
  3. Cut the tentacles into halves.
  4. Put all the ingredients into a pressure cooker.
  5. Cut the konbu into pieces with scissors and add into the pressure cooker along with the daikon and the squid.
  6. Cook for 2 minutes under pressure.
  7. When cooked, let rest for a while.
  8. Take the lid off and simmer to reduce slightly.
