Pressure Cooker Soft-Simmered Squid and Daikon Radish
- 2 Squid
- 2/3 Daikon radish
- 1 Kombu
- 2 tbsp Soy sauce
- 2 tbsp Mirin
- 1/2 tbsp Sugar
- 100 ml Water
- Cut the daikon radish into 1.5 cm slices.
- Remove the entrails from the squid, and chop into 1 cm wide pieces.
- Cut the tentacles into halves.
- Put all the ingredients into a pressure cooker.
- Cut the konbu into pieces with scissors and add into the pressure cooker along with the daikon and the squid.
- Cook for 2 minutes under pressure.
- When cooked, let rest for a while.
- Take the lid off and simmer to reduce slightly.
