Beef Pot Roast
- 4 lb chuck pot roast
- 1 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 4 medium potatoes, quartered
- 1/2 lb baby carrots
- 2 medium onions, quartered
- 1 can condensed French onion soup
- Season roast with salt and pepper.
- Heat oil in a skillet over high heat.
- Add the roast and sear on each side until brown, about 4 minutes per side.
- Place half of vegetables in bottom of slow cooker crock, top with roast, then add remaining vegetables and liquid.
- Add water so that level is roughly half way up on roast.
- Cover and cook 5 hours on high.
