Broccoli Cardinale Recipe
- 3 x Green onions, bulbs only, chopped
- 6 Tbsp. Butter
- 2 Tbsp. Flour
- 1 c. Light cream
- 1/4 c. Catsup
- 3/4 tsp Salt
- 1/4 tsp Pepper
- 1/2 tsp Tabasco sauce
- 2 tsp Lemon juice
- 1 ounce Brandy
- 1 lb Boiled, minced shrimp Paprika
- 2 pkt Frzn broccoli
- Saute/fry onions in 4 Tbsp.
- butter, about 5 min.
- In another saucepan heat remaining butter, blend in flour.
- Add in cream and catsup, stirring constantly till it thickens.
- Add in salt.
- pepper.
- Tabasco sauce and lemon juice.
- Flame brandy; stir into sauce.
- Combine contents for both pans; add in shrimp and stir.
- Cook broccoli according to package directions; drain.
- Place in a greased casserole and pour sauce over it.
- Garnish with paprika and put into a 350 degree oven for about 10 min.
- Note:This recipe makes more sauce than is needed for the broccoli.
- It can also he used as an entree without the broccoli.
