Huckleberry Or Blueberry Pie
- 9-inch pie shell, baked
- 3/4 c. sugar
- 3 Tbsp. cornstarch
- 1/8 tsp. salt
- 1/4 c. water
- 4 c. berries
- 1 Tbsp. butter
- 1 Tbsp. lemon juice
- whipped cream (optional)
- unbaked 9-inch pie shell
- 2 c. sweet potato puree (mashed)
- 2 eggs, slightly beaten
- 3/4 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. ginger
- 1/2 tsp. nutmeg
- 1 tsp. vanilla
- 1 2/3 c. light cream or evaporated milk
- 1/2 c. butter or margarine, melted
- Bake sweet potatoes until tender, peel and mash.
- Make sure all lumps are removed, straining if necessary.
- Mix all ingredients together and pour into pie shell.
- Bake in hot oven (400u0b0) 50 minutes or until a silver knife inserted in filling 1-inch from edge of pie comes out clean.
