Cauliflower Rice (Vegan)

  1. Grate the cauliflower or PULSE in a food processor until the cauliflower resembles rice grains.
  2. *Note: I finely minced the onion with the cauliflower.
  3. Heat coconut oil in a saute pan over medium high heat.
  4. Saute onion and garlic for about 3 minutes.
  5. Add cauliflower, stir well.
  6. Add the water or vegetable broth, sea salt and pepper.
  7. Saute for about 5 minutes until cauliflower is slightly tender.
  8. Place cauliflower in serving bowl and top with chopped parsley (optional).
  9. Serve hot.
