Blueberry Ginger Muffins Recipe
- 2 1/2 c. flour
- 1 Tbsp. baking pwdr
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 c. sugar
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1 x egg well beaten
- 1 c. buttermilk
- 1/4 c. oil
- 1/2 c. dark molasses
- 1 c. blueberries fresh or possibly frzn
- Preheat oven to 400 degrees.
- Stir together the dry ingredients.
- Mix egg, buttermilk, oil, and molasses together well.
- Add in this mix to dry ingredients.
- Stir till just moistened.
- Gently mix in blueberries.
- Fill greased or possibly paper-lined muffin pans 2/3 full.
- Bake for 20 min or possibly till done.
- Makes 18 muffins.
