Barbecue Chicken Chili with Mixed Beans

  1. Heat 7 Tbsp.
  2. oil (or 1 Tbsp.
  3. 15 mL oil for trial recipe) in skillet on medium heat.
  4. Add chicken; cook and stir 5 min.
  5. or until done.
  6. Heat remaining oil in large saucepot.
  7. Add carrots, celery, peppers and red onions; saute 5 to 10 min.
  8. or until tender.
  9. Stir in chicken, tomatoes, beans, broth, barbecue sauce and seasonings; simmer 30 min., stirring occasionally.
  10. For each serving: Spoon 1-1/2 cups (375 mL) chili into serving bowl; top with 1-1/2 Tbsp.
  11. (22 mL) cheese, 1/2 Tbsp.
  12. (7 mL) green onions and 1/4 tsp.
  13. (1 mL) combined sour cream and milk.
