Tuna Macaroni & Cheese Recipe
- 2 c. macaroni
- 2 tbsp. butter or possibly oil
- 2 tbsp. flour
- 2 c. lowfat milk
- Salt & pepper to taste
- 1 c. green or possibly red pepper, minced
- 1 med. onion, minced
- 4 ounce. Velveeta cheese
- 1 can tuna, liquid removed
- Parmesan cheese to cover top
- Cook macaroni till tender and drain.
- To make white sauce, heat butter (or possibly oil) and add in flour and stir till mixed and smooth.
- Add in lowfat milk; stir and cook till thick.
- Add in salt and pepper to taste, peppers, and onion and cook for a few min.
- Add in cheese and stir till melted.
- Add in tuna and stir till mixed.
- Add in macaroni and stir till mixed.
- Pour in greased baking dish and sprinkle top with Parmesan cheese.
- Cover dish with plastic wrap and bake in microwave for 10 min on High heat.
- Turn dish and continue baking for 10 min more.
