Sweet Vegetable and Coconut Green Curry

  1. Heat the olive oil in a pan.
  2. Add the onion and steam-fry for 5 minutes, then stir in the curry paste and cook for 1 minute.
  3. Meanwhile, cut the sweet potatoes into 1-inch chunks.
  4. Add to the spiced onion and stir to coat with the mixture.
  5. Pour in the coconut milk and 2/3 cup water, and add the cinnamon stick.
  6. Bring to a boil, then cover and simmer for 20 minutes.
  7. Stir in peas and tofu (if using), and cook for 3 more minutes.
  8. Scatter cilantro over the top and serve with Thai fragrant rice.
