Summer Cucumber Salsa and Lavash Bread Crackers
- 2 whole Garden Fresh Cucumbers, Peeled And Diced
- 2 ounces, weight Feta Cheese, Diced
- 1/2 cups Red Onion, Chopped
- 2 whole Lemons, Juiced
- 3 Tablespoons Fresh Dill, Chopped
- Pepper To Taste
- 1 package Josephs Flax, Oat Bran & Whole Wheat Lavash Bread, 1 Pound
- Sea Salt
- Spray Oil Or Pam
- Some years ago, when my husband was attending a cardio-rehab program, he was served a cucumber salsa with pita chips.
- He loved it and over the years we tried to recreated it, but our attempts always fell short.
- This week, with our first crop of garden cucumbers, I made another attempt and finally got it just right!
- Enjoy!
- For the Salsa: Mix the cucumber, feta, red onion, lemon juice, dill and pepper; chill.
- If the cucumbers are a bit on the large size I scrape out and discard the seeds.
- If the seeds are on the small side, I dice the entire cucumber.
- For the Lavash Bread Crackers: Preheat oven to 350 degrees.
- Lay a piece of lavash bread on a cutting board.
- Spray each side lightly with Pam or oil.
- With a pizza cutter slice the lavash bread into cracker size pieces whatever size or shape you like.
- Transfer the pieces to a cookie sheet.
- Salt lightly.
- Bake for 5 minutes.
- Remove from oven, flip crackers and bake for 5 more minutes.
- Cool and enjoy or store in an air tight container.
