Four-Ingredient Peanut Butter Cookies
- 1 cup peanut butter
- 1 egg
- 34 cup sugar (Splenda may be substituted)
- 1 teaspoon vanilla
- 12 cup chocolate chips (optional) or 12 cup butterscotch chips (optional)
- Preheat oven to 350.
- Mix peanut butter, egg, sugar, and vanilla in a large bowl with a hand mixer until well combined.
- Stir in chocolate chips or butterscotch chips.
- Spoon tablespoon-sized balls of dough onto an ungreased cookie sheet.
- Do not flatten cookies.
- Bake for 10 minutes at 350.
- Transfer to cooling rack.
