Cajun Skillet Supper
- 1 lb lean ground turkey
- 2 cups frozen cut okra
- 15 ounces no-salt-added corn, rinsed and drained
- 15 ounces kidney beans, rinsed and drained
- 2 cups low sodium beef broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 18 teaspoon pepper
- Heat a large nonstick skillet over medium high heat.
- Brown turkey for 5 to 6 minutes, or until no longer pink, stirring occasionally.
- Put in a colander and rinse.
- Drain well and return to skillet.
- Add remaining ingredients.
- Bring to a simmer over medium-high heat.
- Reduce heat and simmer, uncovered, for 8 to 10 minutes or until flavors are blended, stirring occasionally.
