Blue Mountain Coffee Chiffon Recipe
- 1 tbsp. powdered gelatin
- 1/2 pt. water
- 1 pt. lowfat milk
- 4 Large eggs
- 6 ounce. granulated sugar
- 1 teaspoon vanilla
- 4 heaping teaspoon instant Blue Mountain coffee
- Sm. amount desiccated coconut
- Chocolate chips
- Dissolve gelatin and coffee pwdr in 1/2 pint water over gentle heat, then add in to lowfat milk.
- Add in vanilla and stand in refrigerator till just beginning to set.
- Separate the Large eggs.
- Beat the yolks and sugar in a bowl over a pan of boiling water till thick and creamy, then stir in the coffee mix.
- Lastly, mix in stiffly beaten egg whites till well blended.
- Pour into glass serving bowl.
- Set in refrigerator for at least 4 hrs.
- Decorate top with coconut and dot with chocolate chips.
- Serves 6.
