Salmon Nicoise Salad

  1. Whisk together viniagrette ingredients until well combined.
  2. Wash and dry lettuce; arrange leaves on a large serving platter.
  3. Toss together the beans, tomato wedges, red pepper slices and red onion slices; arrange on the lettuce.
  4. Drain and flake salmon.
  5. Arrange flaked salmon on bean mixture.
  6. Drizzle vinaigrette evenly over salad just before serving.
