Vegetable Soup With Tortellini
- 16 ounces frozen cheese tortellini
- 1 12 cups of chopped carrots
- 1 12 cups celery
- 12 of a medium red onion
- 1 (14 1/2 ounce) can beef broth
- 3 (14 1/2 ounce) cans chicken broth
- 12 teaspoon cumin
- 12 teaspoon garlic powder
- 18 teaspoon black pepper
- 12 teaspoon salt
- 8 ounces shredded cheese
- 1 tablespoon olive oil, for sauting
- diced Rotel Tomatoes, with mild chilles
- Saute chopped veggies in olive oil til tender about 4 minutes when tender add broths, tomatoes and seasonings.
- Bring to a boil, add tortalini's let simmer uncovered about 10 minutes serve hot with shredded cheese and enjoy.
