Mozzarella-Chicken Skillet
- 12 oz. boneless skinless chicken breasts, cut into strips
- 12 medium size fresh mushrooms, sliced
- 1 medium red onion, chopped
- 1 cup marinara sauce
- 1/2 tsp. dried oregano leaves
- 1-1/3 cups instant white rice, uncooked
- 4 slices KRAFT 2% Milk Mozzarella Singles
- 4 broccoli spears, chopped
- 2 carrots, chopped Target 2 lb For $3.00 thru 02/06
- 2 medium red peppers, chopped
- 1/3 cup KRAFT Lite Raspberry Vinaigrette Dressing
- 4 fresh peaches, sliced
- 8 oz. nonfat yogurt, favorite flavor
- 32 fl oz (4 cups) drinking water
- Lightly coat nonstick skillet with cooking spray.
- Add chicken; cook and stir 10 min.
- Add mushrooms and onions; cook and stir 2 min.
- Stir in marinara sauce, 1 cup water and oregano; bring to a boil.
- Stir in rice; cover.
- Let stand 3 min.
- Top with 2% Milk Singles; cover.
- Let stand an additional 2 min.
- or until 2% Milk Singles are melted.
- Toss broccoli, carrots and peppers with dressing.
- Divide into 4 equal servings.
- Complement each meal with a sliced peach topped with evenly divided yogurt.
- Serve each person an 8 fl oz glass of water with the meal.
