Bacon and Double Cheese Burger Loaf

  1. Heat oven to 350F.
  2. In a medium pan cook the bacon over medium heat until just limp, about 3-4 minutes.
  3. Remove the bacon and save it.
  4. In a large bowl, combine the ground beef, bread crumbs, 1/2 cup cheese, onion, mayonnaise, relish, mustard, salt, pepper and egg; mix well.
  5. Pat the mixture into a shallow 2-quart baking dish.
  6. Spread the top with the ketchup then lay the bacon over the top of the loaf.
  7. Bake until the top is firm and the bacon is crisp 45-50 minutes.
  8. Then spread the rest of the cheese during the last 5 to 10 minutes of the baking.
  9. Remove from the oven and let the loaf rest in dish for 10 minutes.
  10. Then cut into slices and serve.
