Chocolate Crinkles (Gluten-Free)
- 12 cup vegetable oil
- 4 ounces dark chocolate
- 2 cups sugar
- 3 eggs, room temperature
- 2 teaspoons vanilla
- 1 12 cups rice flour (Rice flour mix)
- 1 tablespoon rice flour (Rice flour mix)
- 12 teaspoon xanthan gum
- 14 teaspoon salt
- 1 teaspoon baking powder
- Melt chocolate, then mix with oil and sugar.
- Mix in eggs, one at a time.
- Stir in the vanilla.
- Add rice flour mix, xanthan gum, salt and baking powder.
- Mix everything together, then place bowl in the fridge for a few hours.
- Heat oven to 350F Form dough into small balls.
- Place them on a greased cookie sheet (about 1.25" apart), and bake 10-12 minutes.
