Clam, Shrimp, and Chicken Chinese Dumplings

  1. Put the clams in boiling water until they start to open.
  2. Remove from the boiling water into cold water, shuck the clams, and finely chop the clam meat.
  3. Place in a mixing bowl.
  4. Mince chicken breast, or use store-bought ground chicken meat.
  5. Add chicken to the mixing bowl.
  6. Finely chop the shrimp and add to the mixing bowl.
  7. Finely chop scallions and add them to the mixing bowl.
  8. Add salt, soy sauce, ginger, sesame oil, and Szechuan pepper to bowl.
  9. Mix all ingredients thoroughly.
  10. Roll out the wrapper dough into wrappers.
  11. Wrap the filling in the dumpling wrappers.
  12. Place dumplings in a bamboo or metal steamer and steam then until hot and juicy.
