Peking Duck

  1. Boil 4 quarts (3775 ml) of water with honey, sugar, ginger, scallions, and food color.
  2. Soak the duck in the boiling broth until it turns orange-red.
  3. Hang duck to dry for 5 hours.
  4. Preheat oven to 350 degrees (175 C.).
  5. Place pan of water in shelf below duck in oven.
  6. Bake until the duck looks crispy.
  7. Debone and it's ready to serve.
  8. Serve deboned duck with scallion, cucumber slices and Hoisin sauce wrapped in pancake.
  9. ENJOY~~
