Green Bean & Chickpea Salad Recipe
- 1 pound green beans, trimmed & cut into 2 inch lengths
- 1 (16 ounce.) can chickpeas (garbanzos), liquid removed & rinsed
- 1/4 c. onion, minced
- Steam the green beans till they are tender-crisp, about 5 min.
- Place the beans, chickpeas, and onion in a large bowl.
- In a small bowl, combine all the dressing ingredients.
- Add in the dressing to the bean mix, tossing the ingredients well.
- Refrigeratethe salad for 1 hour or possibly longer before serving.
- Can be made with a can of green beans.
