Lemon-Dill Cream Cheese Pasta Roll-ups
- 1/2 teaspoons Salt (for Boiling Pasta)
- 4 whole Lasagna Noodles
- 4 ounces, weight Cream Cheese, Softened
- 2 teaspoons Dill
- 1 teaspoon Black Pepper
- 1 whole Lemon (Washed, Zest &Juiced)
- 1/2 cups Low Sodium Vegetable Stock
- 1/4 cups Light Cream
- 1/2 cups Freshly Grated Parmesan Cheese
- Preheat oven to 400 degrees F.
- To a pot of boiling water, add salt and lasagna noodles (cook per package instructions), drain and lay flat on a clean work surface.
- In a mixing bowl add softened cream cheese, dill, pepper, lemon juice and zest and stir well with a sturdy spatula to combine.
- In a small oval or square baking dish, add vegetable stock and cream and stir well to mix.
- Set aside.
- Add cream cheese mixture to the center of each lasagna noodle using a small spatula, roll each one up into a roll and place seam side down into the baking dish.
- Cover with aluminum foil and place on the middle rack in the oven.
- Bake 10 minutes.
- Then remove foil the last 5 minutes of bake time.
- Garnish with freshly grated parmesan cheese.
- Serve with a side salad, crusty bread and enjoy!
