Mary Gallo's Lemon Ambrosin Bars Recipe
- 1 1/2 c. unsifted flour
- 1/3 c. confectioners' sugar
- 3/4 c. cool butter
- 2 c. firmly packed light brown sugar
- 4 Large eggs, beaten
- 1 c. flaked coconut
- 1 c. finely minced pecans
- 3 tbsp. flour
- 1/2 teaspoon baking pwdr
- Lemon Icing
- Preheat oven to 350 degrees.
- In medium bowl combine flour and confectioners' sugar, cut in butter till crumbly, press onto bottom of 13"x9" greased (lightly) baking pan.
- In large bowl, combine the remaining ingredients except the icing, mix well and spread proportionately over baked crust.
- Bake 20 to 25 min.
- Let cold, spread lemon icing.
- Cut into bars and then cover tightly and store bars in the refrigerator till chilled.
- Lemon Icing: Mix 2 c. confectioners' sugar with 3 Tbsp.
- of ReaLemon and 2 Tbsp.
- of soft butter till smooth.
- Makes about 2/3 c..
