Broccoli Soup With Dill And Feta Recipe

  2. In large saucepan, heat oil.
  3. Add in onion and garlic and cook gently till tender, about 5 mins.
  4. Add in broccoli and potato and stir to coat well.
  5. Add in stock and bring to boil.
  6. Reduce heat and cook gently 15-20 mins till potato is tender.
  7. Add in all but 1 tbsp dill and cook a few mins.

  9. Puree soup.
  10. Return to heat.
  11. Season with salt and pepper (remember cheese is salty!).
  12. Serve with remaining dill and feta sprinkled on top.
