Minted Vegetable Salad

  1. Put onion slices in a large bowl.
  2. Sprinkle lightly with salt and pepper.
  3. Let stand 10 minutes.
  4. Add in tomatoes, bell pepper, cucumber, parsley and mint; sprinkle with more salt and pepper if desired; toss to mix.
  5. Drizzle olive oil and lemon juice over vegetables.
  6. Toss to coat; serve.
