Fricassee N' Chicken Balls
- 2 onions (diced)
- 1 lb chicken wings, necks, and feet
- 12 teaspoon salt
- 14 teaspoon pepper
- 2 tablespoons flour
- 12 lb ground chicken
- 1 onion, grated
- 2 tablespoons matzo meal
- 1 egg
- 1 garlic clove, crushed
- 14 teaspoon salt
- 18 teaspoon pepper
- 14 teaspoon paprika
- Saute onions in oil.
- Add chicken parts and seasoning.
- Saute for 15 minutes.
- Add flour and stir for 2 minutes.
- Add water to barely cover and cook for 1 hour.
- Combine all ingredients for chicken balls, forming into tiny balls and drop into sauce.
- Cook over low heat for 30-40 minutes.
- Optional: Cubed liver pieces may be added to fricassee 5 minutes before done.
