Sweet Potato Grits
- 2 cup water
- 2 cup milk
- 2 medium sweet potatos, peeled & grated
- 1 cup stone-ground grits
- 1 coarse salt and freshly ground white pepper- to taste
- 1/4 tsp ground ginger
- 1 pinch ground cinnamon - to taste
- 1 tbsp unsalted butter
- In a large, heavy saucepan, combine the water & milk and bring to a gentle boil over medium-high heat.
- Slowly add the grits, whisking constanly.
- Add sweet potato, season with salt & pepper.
- Decrease heat to low and simmer, stirring often, until the grits are creamy & thick - 45 to 60 minutes.
- Taste the grits and sweet potato to make sure both are cooked and tender.
- Add the ginger, cimnamon and butter (I added an extra tablespoon of butter).
- Taste and adjust for seasoning with salt and pepper.
- Serve immediately.
