Tomato Egg Fried Rice
- 2 cup white rice
- 3 tomatoes, deseeded and chopped into cubes
- 3 eggs
- 1/4 tsp sesame oil
- 1/2 tsp salt
- 1/2 tsp ground white pepper
- 1 tbsp soy sauce
- 1 shallot, sliced
- 2 cup frozen vegetables
- 1/4 cup cooking oil
- 1 tsp dark soy sauce (optional)
- Prepare cooked rice, then set aside and let it cool and dry.
- Rice refrigerated overnight works best.
- Prepare steamed or microwaved frozen vegetables.
- Beat egg, sesame oil, salt and pepper.
- Spread cooking oil evenly to heated fry pan.
- Stir fry shallots till light brown.
- Add rice and stir-fry for about 3 minutes.
- Push rice aside to form a crater, and stir-fry tomatoes in the crater for 1 minute.
- Add vegetables to tomatoes and mix with rice.
- Push rice aside to form a crater again and stir-fry eggs in the crater till soft.
- Mix rice into soft egg mixture evenly and gently.
- Add salt to taste and serve.
