Tomato Egg Fried Rice

  1. Prepare cooked rice, then set aside and let it cool and dry.
  2. Rice refrigerated overnight works best.
  3. Prepare steamed or microwaved frozen vegetables.
  4. Beat egg, sesame oil, salt and pepper.
  5. Spread cooking oil evenly to heated fry pan.
  6. Stir fry shallots till light brown.
  7. Add rice and stir-fry for about 3 minutes.
  8. Push rice aside to form a crater, and stir-fry tomatoes in the crater for 1 minute.
  9. Add vegetables to tomatoes and mix with rice.
  10. Push rice aside to form a crater again and stir-fry eggs in the crater till soft.
  11. Mix rice into soft egg mixture evenly and gently.
  12. Add salt to taste and serve.
