Pork Stuffed Acorn Squash Recipe

  1. Cut squash in half; remove seeds and membrane.
  2. Cover and cook in boiling water for 10 min.
  3. Scoop out pulp from shells, leaving 1/2" margin.
  4. Cook pork till brown, stir in apple and pulp.
  5. Cook over medium heat for 10 min, stirring often.
  6. Add in sugar, nutmeg, cinnamon and salt; mix well.
  7. Spoon into squash shells, dot with butter.
  8. Sprinkle remaining brown sugar.
  9. Place shells in a shallow pan; bake at 350 degrees for 30 min.
  10. Yield: 2 servings.
  11. Serve with salad, crusty bread and apple pie or possibly cobbler.
