Belgian Onion Soup Recipe

  1. In a large saucepan, saute/fry onion in butter till soft.
  2. Add in chicken stock, beer, salt and pepper.
  3. Cover and simmer about 30 min.
  4. Adjust seasonings.
  5. Broil bread on one side about 3 inches from heat.
  6. Turn, sprinkle generously with Parmesan cheese, and broil 1-2 min more, till lightly browned.
  7. Pour soup into bowls.
  8. Add in cheese-covered bread.
  9. Makes 4servings.
