Shrimp Hurry Curry
- 1/2 c. chopped onion
- 1/2 to 1 1/2 tsp. curry powder
- 1 Tbsp. butter
- 1 can shrimp soup (frozen kind preferred)
- 1 c. sour cream
- 1 c. cooked shrimp
- 1 c. raw rice
- paprika
- In
- top part of double boiler, simmer onion
- and
- curry powder in butter until tender.
- Do not brown.
- Add frozen soup and
- stir until smooth.
- Add sour cream and shrimp
- and
- heat until
- hot all
- through.
- Serve over hot rice and
- top
- with paprika.

- almost any
- way
- it's cooked.
- This is one of my quickies they have
- enjoyed through the years.
- I
- never serve this one with the traditional curry "boys,"
- just
- plain. But
- chutney,
- raisins, grated coconut, chopped green onions, etc., may be used.
