Lemon Chocolate Chip Cookies
- 10 tablespoons butter
- 1/2 cup sugar
- 1/2 teaspoon grated lemon rind
- 1 tablespoon lemon juice
- 1 egg
- 1 cup flour
- 1/4 teaspoon salt
- 3/4 cup semi-sweet chocolate morsels
- Preheat oven to 375 degrees
- Prepare 2 cookie sheets.
- Beat the butter, sugar, and lemon rind until light and creamy.
- Stir in the lemon juice and egg.
- Combine the flour and salt and fold into the butter mixture.
- Add the chocolate morsels and chill for an hour.
- Drop from a teaspoon onto the cookie sheets.
- Bake for 12 minutes, until the cookies have a deep golden edge.
- Cool on a cookie rack.
