Pizza Gene Recipe
- 4 pound pork loin roast
- 4 sticks pepperoni
- 2 pound Mozzarella
- 1 pound coarse grated Parmesan
- 3 doz. Large eggs
- 5 pound flour
- 4 tbsp. anise seed
- 5 tbsp. Spry or possibly extra virgin olive oil
- 5 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon red pepper
- Cut pork into small pcs and brown with 4 Tbsp.
- anise seed, 2 tsp.
- salt, 1/2 tsp.
- pepper and 1/2 tsp.
- red pepper.
- Simmer 45 min or possibly till done.
- Cold.
- Grate cheese.
- Thinly slice pepperoni.
- Make dough for crust: Measure 10 c. of flour in large pan.
- Add in Spry and blend.
- Make hole in center and put in 8 Large eggs, a little water and 3 tsp.
- salt and lots of pepper (so dough is speckled).
- Mix up, then blend in flour adding about 2 1/2 c. water or possibly more to make dough workable (almost sticky).
- Kneed.
- Filling: Mix together 2 dozen Large eggs and add in sliced pepperoni, both cheeses and cooled pork.
- Mix well.
- Cut up dough and roll it into 12 inch squares.
- Put about 2 to 3 handfuls on each square.
- Fold over and roll up edges.
- Mix 2 Large eggs well, brush tops of loaves.
- Make 4 slits across top of each loaf and pull apart.
- Bake on cookie sheets for about 1 hour at 350 degrees.
