Balsamic Vinegar & Fresh Herb Marinade
- 1/2 cup olive or vegetable oil
- 1/3 cup Balsamic vinegar or red wine vinegar
- 1/3 cup dry red wine or unsweetened red grape juice
- 1 tablespoon chopped fresh basil leaves*
- 1 tablespoon chopped fresh oregano leaves**
- 2 teaspoons firmly packed brown sugar
- 1/2 teaspoon coarse ground pepper
- 2 teaspoons finely chopped shallot***
- Combine all ingredients in medium bowl.
- Use to marinate 2 pounds meat (chicken, pork, beef or fish).
- Cook as desired.
- *Substitute 1 teaspoon dried basil leaves.
- **Substitute 1 teaspoon dried oregano leaves.
- ***Substitute 2 teaspoons chopped green onion.
