Two Corn Casserole Recipe
- 3/4 c. minced green pepper
- 1/3 c. minced onion
- 1/2 c. butter
- 1 (17 ounce.) can whole kernel corn
- 1 (17 ounce.) can cream-style corn
- 3 Large eggs, beaten
- 18 1/2 ounce. pkg. corn muffin mix (Jiffy)
- 1 c. shredded cheddar cheese
- Saute/fry green pepper and onion in butter in skillet till tender.
- Combine corn, Large eggs and muffin fold in large bowl; mix well in large bowl.
- Add in onion, mix well.
- Pour into greased casserole.
- Sprinkle with cheese and bake for 55 to 60 min or possibly till hard.
- Let stand 5 min before serving.
