Uncle Pete's Favorite Cheese Soup Recipe

  1. Saute/fry vegetables in canola oil till tender but still crisp.
  2. Don't brown.
  3. Blend in flour then gradually add in broth.
  4. Cook over low heat till mix thickens and boils.
  5. Cook for 5 min.
  6. Add in the cheese and stir till melted.
  7. Stir in the lowfat milk, sherry and olives.
  8. Season to taste with pepper.
  9. Serve garnished with fresh parsley.
  10. Simmer 10 min.
