Apricot-Cinnamon Couscous
- 1 cup couscous
- 1 tablespoon packed brown sugar
- 1 cinnamon stick
- 1 12 cups apple cider
- 12 cup dried apricot
- Put couscous brown sugar, cinnamon stick and apple cider in a medium pot over high heat.
- Chop 1/2 cup dried apricots.
- Add the apricots to the pot.
- When the cider comes to a boil, cover the pot and turn off the heat.
- Let the couscous steep for about 5 minutes.
- Fish out the cinnamon stick.
- Fluff the couscous with a fork, taste and adjust the seasoning.
- Can use 1/4 teaspoon ground cinnamon instead of the cinnamon stick.
