Almond Bark Recipe
- 2 c. Sugar
- 2/3 c. Lowfat milk
- 1 Tbsp. Light Corn Syrup
- 1/4 tsp Salt
- 2 Tbsp. Butter
- 1 tsp Vanilla
- 1 c. Unblanched Almonds, toasted
- Combine sugar, lowfat milk, corn syrup, and salt in 2 qt heavy saucepan.
- Cook, stirring constantly till sugar dissolves and mix comes to a boil.
- Then cook without stirring to soft ball stage (234)..
- Remove from heat; add in butter, but don't stir.
- Let cold til lukewarm (110) Then add in vanilla.
- Beat til mix thickens and spread is creamy.
- Add in toasted almonds.
- Then spread about 1/2 inch thick on wax paper lined baking sheet.
- Cold, break into pcs.
- Makes about 1 1/2 pounds.
