Stacy's Italian Sausage Pasta
- 1 lb Italian Sausage, Mild
- 1 lb Italian Sausage, Hot
- 2 Onions, chopped
- 1 large Green Bell Pepper
- 4 tsp Garlic, chopped
- 2 can Fire Roasted Diced Tomatoes with Basil & Oregano
- 1 Kosher Salt
- 1 cup Grated Parmesean Cheese
- 1/2 cup EVOO
- 1/2 cup Parsley, dried
- 3 tsp Basil, dried
- 1 Parmesean Cheese
- 1 box Rigatoni (or any like pasta)
- Slice up all sausage links and in frying pan, brown on all sides.
- Drain oil from pan.
- Add chopped onion and green pepper and saute till onion is opaque and soft.
- Add garlic and saute for an additional minute (too long makes the taste bitter).
- Add the tomatoes and simmer for approximately 10-15 minutes until sauce starts to thicken.
- Season with a pinch of salt.
- Meanwhile cook pasta of choice according to package directions.
- In a large mixing bowl, combine the parmesan, Basil, parsley and EVOO.
- Mix till well combined.
- Once pasta is done and drained, pour into mixing bowl with the cheese mixture.
- Add the sausage mixture.
- Mix well until all ingredients are incorporated well.
- Serve.
- Top with additional parmesean if desired.
