Light Strawberry Charlotte
- 1 pint strawberries, hulled
- 2 pkg. (4-serving size each) JELL-O Strawberry Flavor Sugar Free Gelatin
- 1-1/2 cups boiling water
- 1 container (8 oz.) BREYERS Vanilla Lowfat Yogurt
- 32 NILLA Wafers
- COOL WHIP LITE Whipped Topping (optional)
- Reserve 1 strawberry for garnish.
- Place remaining strawberries in electric blender; cover.
- Blend until pureed.
- Dissolve gelatin in boiling water in medium bowl; stir in pureed strawberries.
- Refrigerate until slightly thickened, about 45 minutes.
- Stir in yogurt.
- Beat with electric mixer on low speed until light and fluffy.
- Line bottom and sides of 9-inch pie plate with wafers.
- Pour in strawberry mixture.
- Refrigerate 2 hours or until set.
- Garnish with whipped topping and reserved strawberry, if desired.
