Light Strawberry Charlotte

  1. Reserve 1 strawberry for garnish.
  2. Place remaining strawberries in electric blender; cover.
  3. Blend until pureed.
  4. Dissolve gelatin in boiling water in medium bowl; stir in pureed strawberries.
  5. Refrigerate until slightly thickened, about 45 minutes.
  6. Stir in yogurt.
  7. Beat with electric mixer on low speed until light and fluffy.
  8. Line bottom and sides of 9-inch pie plate with wafers.
  9. Pour in strawberry mixture.
  10. Refrigerate 2 hours or until set.
  11. Garnish with whipped topping and reserved strawberry, if desired.
