Cheesecake

  1. Combine first 4 ingredients.
  2. Press into bottom of 9 inch by 4 inch springform pan.
  3. Set aside.
  4. Place 1 package cream cheese and 1 egg into large mixer bowl.
  5. Beat on low speed to combine.
  6. Repeat with the remaining cream cheese and eggs.
  7. Increase mixer speed to medium.
  8. Add granulated sugar.
  9. Beat until light and fluffy.
  10. Pour into prepared springform pan.
  11. Bake in center of oven at 350 degrees (175 C.) for 50 to 60 minutes (until top of cake is light brown).
  12. Remove cake from oven.
  13. Allow to stand for 10 minutes.
  14. Cake will fall a little.
  15. Combine sour cream and condensed milk.
  16. Pour over cake.
  17. Bake additional 10 minutes.
  18. Remove from oven and cool completely.
  19. Add 4 tbsp (60 ml) cocoa to the cream cheese mixture.
  20. Bake as directed above.
  21. When completely cooled (overnight), sprinkle top of cheesecake with miniature chocolate chips.
  22. You can also use chocolate graham crackers in the crust.
