Fish Stew
- 4 tablespoons oil
- 4 tablespoons flour
- 2 -4 lbs fish
- 1 green bell pepper
- 1 lemon
- 1 onion
- 1 bunch green onion
- 1 stalk celery
- 1 tomatoes
- 1 garlic clove
- 2 (14 ounce) cans beef broth
- to taste paprika, thyme, pepper, white pepper, cayenne pepper, oregano, rosemary
- Heat oil, add and cook Flour until a rich golden brown.
- Course chop the bell pepper, onion, green onion, celery and garlic, add to roux along with spices, cook for aprox.
- 10 minutes.
- Add tomato, and lemon,.
- Slowly (very slowly to thicken)Add 1-2 can beef broth.
- Cook covered for 30 minutes.
- Cut fish into chunks, add and cook for 10-12 minutes
- serve over rice.
