Vegetable Pulao Recipe
- 8 tbsp. butter or possibly oil
- 2 onions, sliced
- 2 tomatoes, peeled and sliced
- 2 c. mixed vegetables
- 1/4 teaspoon crushed black pepper
- 3 c. water
- 1 teaspoon allspice
- 1 bay leaf
- 2 c. long grain rice
- 1 teaspoon salt
- 1/2 c. cashews (opt.)
- Heat 2 Tbsp.
- of oil, brown the onions, cashews and set aside for garnishing.
- Heat 3 Tbsp.
- of oil in a pan, put the vegetables in and stir for 10 min and set aside.
- Stir allspice, bay leaf, and pepper in remaining 3 Tbsp.
- of oil for about 1 minute.
