Saute Greens w/ Mango

  1. Heat butter and enough oil to cover the bottom of the pan.
  2. Add onions and caramelize slowly.
  3. When onions are nearly caramelized, add garlic and bell peppers, and turn up heat.
  4. When garlic is nearly caramelized, approximately 1-2 minutes, add greens.
  5. Stir to coat greens with fat.
  6. Greens will eventually shrink to fit in pan.
  7. Add oil as needed.
  8. When greens are nearly wilted, add mango and soy sauce.
  9. Reduce til soy is nearly evaporated.
  10. Add fig spread.
  11. Stir to coat.
  12. Serve.
