Easy Chilli

  1. Chop onion and saute in a little bit of olive oil over medium high heat.
  2. Break up ground beef and add to pot.
  3. Use a spoon to break it up while it cooks.
  4. Cook until no longer pink, 5-7 minutes...
  5. Add beans, tomatoes, rotel, seasonings, corn and raise to high heat.
  6. Once you bring it to a boil, reduce to medium heat and cover for 50 minutes.
  7. Enjoy!
  8. Optional: top with shredded cheddar cheese.
  9. I serve it with either white rice or blue corn tortilla chips.
